Homemade Pesto Margherita Pizza and my Favorite Wine Glass (because there is such a thing)

I’ve been asked a couple times now for my homemade pizza recipe. If you follow me on Snapchat (@maddiehittle) then you see that we make this super simple pizza like every week…it literally takes 5-7 mins to prep and it cooks for about 20 mins. And it’s SO GOOD.

This past weekend, Aaron and I basically had no plans. That never, ever happens so we took advantage of the time and had one of the best weekends…(besides my phone getting sucked into my treadmill at the gym…) but even then…great weekend.

Whenever we take the time to relax, do nothing but enjoy our home, our yard, our dogs, and each other…good things happen. We both feel inspired and more driven to accomplish our goals. But it’s hard for us to not make plans…we like to be busy. But when we force ourselves to do so, it’s good. Real good.

So we made our favorite homemade pizza, drank some yummy rosé, that is now a new favorite. We love a good dry rosé and La Crema has an amazing one. We had it a couple weekends ago when we went to Healdsburg, Ca for the weekend. So good we had to take some home with us!

After the pizza went into the oven we sat outside with the pups and drank our rose with our FAVORITE plastic, stemless wine glasses! So we’ve had these guys for about a year now and I swear they are my favorite glasses ever. We used to be all fancy and use our really expensive, super nice glass wine glasses (which we also love) but we quickly learned that those were too high maintenance for us…we have a little issue keeping up with the dishes if you catch my drift!

So when I found these amazing plastic, stemless glasses that are DISHWASHER safe…it was love at first sight. We legitimately have like 18-20 of them now because that’s all we use when we have guests over. So you should get them…all that to say, you can find them on Amazon here! Do it…

Anyways…back to the pizza…


Homemade Pesto Margherita Pizza

1 Trader Joe’s fresh pizza dough (whole wheat)

flour

2 tablespoons Trader Joes Trader Giotto’s pesto

2 tablespoons olive oil

8 oz. fresh mozzarella ball sliced thinly

2 beef steak tomatoes sliced thinly

1/4 red onion sliced thinly

sea salt and freshly grounded black pepper

fresh basil chopped

Directions:

Follow instructions on the pizza dough bag. Use flour to mold your dough into the desired shape and thickness you prefer. When finished, place dough on baking sheet. I usually spray coconut oil on my baking pan just in case, the dough can be very sticky.

Use the olive oil and pesto as your sauce. Mix together with a spoon right on the dough. No need to waste any more dishes by mixing separately. Then place your fresh mozzarella on top of the sauce. After the cheese is on, place your sliced tomatoes and red onion.

Before I put the pizza in the oven I sprinkle a little sea salt and freshly ground black pepper on top for extra flavor.

Place in the oven for about 20 minutes, until the dough gets slightly golden. I spin my pizza around half-way through the cooking process just to make sure everything is even. There’s nothing worse than a doughy pizza when you’re expecting a crunch.

Once the pizza has cooled a few minutes I top with chopped fresh basil and the most amazing balsamic glaze. We both love to dip our pizza in olive oil and some more balsamic vinegar.
